The Verdict
Backed by an all-star lineup, including the founder of Rustica, Hobsons Bay Hotel opens its doors just in time for summer. Brenton Lang—with partners Drew Gibbs and Matt Cook—have completely revamped the 100 year-old Williamstown pub with a new look, team and rooftop deck, perfect for the summer holidays.
Ben Pigott is a former chef at Andrew McConnell’s Cumulus Inc. and Supernormal, and is the culinary force behind Hobsons Bay Hotel’s all new menu. With a strong emphasis on produce, including small and sharing plates, in addition to a more elevated pub-style fare. Dishes include rotisserie chicken and chips, beer-battered fish and chips and dry-aged striploin on the bone, plus plenty more.
“We want to bring the building back to the neighbourhood pub and execute a high-quality venue with a dining and service experience to match. We knew the expertise of the chef we needed for the venue and we couldn’t be more excited to have teamed up with Ben,” says Lang.
Designer Fiona Drago is the creative talent behind Hobsons upgrade, featuring a light-filled interior furnished in dark bronze trims, deep grey panels, grey marble, smoked timber, tan leather and soft lighting, exuding comfort and sophistication.
Set over three levels, the hotel offers versatility in spades. Ground floor dining boasts a brasserie-style dining room, featuring a tartan custom-made in Glasgow. Further enhancing the appeal is the open kitchen, wood fire grill and rotisserie, making for an entertaining experience.
The first floor offers a private dining room with seating up to 24 people, in addition to a wrap around balcony for flawless indoor/outdoor entertaining. There’s also an enormous 100 person rooftop deck, with tap wines and cocktails available from the top level bar. Additionally, there are 11 styles of beer, and an extensive wine list. In due course, seating will be up to 240 patrons across the three levels.
