THE VERDICT

Melbourne has a stack of bars, but none are quite like this, blending Filipino culture and contemporary cocktails into a delicious drinkable treat—say hello to Inuman. The name is a nod to tradition, derived from the Tagalog word ‘to drink.’  

Championed by the Askal team, you know what they deliver will be impeccable with a cocktail menu to match. Some signatures include Paeroa Hard, a refreshing citrus, honeycomb whiskey, Filipino tapuy rice wine and lemon. And the Boba Blind Big, which playfully sloshes stolen rum, ube halaya milk, and rum caramel boba for a decadent milk tea twist. Each cocktail has been crafted to honour traditional recipes and ingredients, whilst adding a modern shake into the mix.

As for the food, you can start with freshly shucked oysters served with sinamak granita, onion, and fried almonds with a chilli-garlic crunch. Followed by some duck liver parfait with feijoa preserve and toasted Binondo doughnut. Delightful.
