The Verdict

Rosemary Andrews, the famed ex-pastry head chef of Ben Shewry’s Attica Summer Camp, is opening a dessert-dedicated, long-term pop-up store in Malvern. Still being fitted out, Mietta By Rosemary will be a minimal and monochrome store, with the spotlight on an art-gallery-like cake display. 

After refining her pastry skills at some of Melbourne’s best (EZARD, Tivoli Rd Bakery and Attica), and working alongside culinary talent in London (Gordon Ramsay, The Ledbury and Dinner by Heston Blumenthal) Rosemary Andrews is taking centre stage. 

Mietta by Rosemary will offer a range of desserts, including her dulcey baked cheesecake, two-texture Valrhona chocolate cake and lemon tart. Rosemary’s signature layer cakes, which have taken off in her dessert box business, will reign supreme, such as her 8-layer carrot cake—ultra-thin tiers of spiced carrots and pecan mix, perfectly stacked into a tall wedge. 

It took two years for Rosemary to find the perfect space for her new venture, which has been finessed with the help of Design By Golden. She hopes it will act as a stepping stone to another property, after the six-month lease. 

The shop front, located on Glenferrie Road, will open its doors on Fridays, Saturdays and Sundays until sold out. Keep on top of all updates from Mietta over here
