THE VERDICT
Nestled comfortably at the end of Mill Place is a monogrammed red door that intrigues—entry to a heritage-listed building straight from the 1840s. Walk through and find a plain vintage dressing room, to the unassuming eye. Those who dare walk through the brick-lined hall and past the traces of fabric can slide the gilt-framed mirror affixed at the end, and might just find themselves in a secret entrance to a speakeasy gem.
What was once a historic textile mill crafting hats, soaps, and candles has re-emerged as Mill Place Merchants, an antique bar poised to be a hotspot for local revellers. The secreted 60-seater is decked out with Victorian furniture and spreads of vintage decor, preserving the venue’s timeworn character.
On the drinks front, they stick to the theme. Led by the awarded expert Giancarlo Mancino, Mill Place Merchants mixes up a hefty selection of cocktails. hoose from signature concoctions that pay homage to both cocktail OGs and legends alike, along a stellar line-up of wines, champagnes, beers, and spirits to sip on. For a modern touch, they decorate the cocktails with local garnishes made in-house, like Tasmanian cherries steeped in bourbon.
The food follows suit, with a menu curated by Chef Deepak Mishra, bringing with him experience in international and local five-star luxury hotels. Accompany your drinks with either small bites or large dishes fused with native Australian ingredients for a taste of tradition and expertise.
