The Verdict

What started as a little craft brewery serving some truly unique and exceptional beers, has now expanded into a fully-fledged restaurant, brewery, and bar, all in the same location. Molly Rose Brewery, the brainchild of Nic Sandery, has only been open since 2019 but took no time at all to leave an impact on the Collingwood locals.

However, their expansion is taking them to a whole new level, and they now boast one of the biggest beer gardens in the locale. A new centrepiece bar is at the forefront of the reno, which is decked out with a hefty beer list curated by Sandery himself and influenced by his world travels, alongside a majority Australian wine list, a cocktail list, and of course, Molly Rose’s own limited release and core beer range.

There will also be a new restaurant to help line your stomachs, and diners can pair their meals with specific beers, again chosen by Sandery. Dishes will include stuffed chicken wings, saltbush and mountain pepper squid, and Sri Lankan string hoppers, each with its own accompanying drinks to wash it down.
