The verdict

A restaurant, bar and cocktail lounge in one, Collingwood's The Noble Experiment is a Melbourne establishment like no other. Inspired by the old school drinking houses of the 1920s, The Noble Experiment offers patrons a series of unique spaces to indulge in a tipple or two; a New York style bar on the top floor, serving Melbourne's most extensive range of bottle and barrel aged cocktails (for the novice and serious alike) and an enviable selection of rare and fine whisky.

The Underground Experiment in the basement is a creative, ever-changing bar and function space where cocktails, dancing and good times reign supreme. The ground floor is home to The Noble Experiment's restaurant, where chef Toby Henderson delivers an exciting menu inspired by influences from kitchens across the US and Europe.

While known for the 'Noble Feasts' (slow cooked meats that are perfect for sharing) and the degustation style Chef's Menu, the restaurant features signature dishes and shows Bell's commitment to local and sustainable eating. You can also enjoy cocktails on this level – bottle aged Negroni's or an Outrageously Good Espresso Martini are just the start.

It's not all wining and dining though at The Noble Experiment – they know how to throw a great party! Both the mezzanine level and The Underground Experiment are among some of the best function spaces in Melbourne, accommodating anywhere from 15 to 120 people. Good times, guaranteed!
