The Verdict
A new joint project between the owners of Hop Nation Brewing Co. and Yarrville's Navi has just popped up in West Footscray.
Zymurgy, is a pop-up beer garden that showcases Victoria's best beer and wine, along with a charcoal-focussed menu that'll keep you full in between drinks.
“Zymurgy refers to the age-old practice of fermentation, which will be at the core of everything we do,” said Hop Nation's Sam Hambour.
“To brew, ferment or cook with charcoal is to hand over a certain level of control to the elements; we don’t always know what we’re going to get, but that’s half of the fun,” adds Navi's Julian Hills.
Zymurgy's menu features dishes such as grilled pretzel with smoked wagyu butter and
an ox tongue reuben sandwich; but the hero is really the rotating meat of the day, served with house pickle and fries.
10 Hop Nation beers will be on tap, with a rotating selection of cocktails and wine on tap also.
