Alessandro Pavoni Is Doing Italian, All Day, At Cibaria In Manly

An all-day, multi-part Italian dining concept at the stylish Manly Pacific Hotel on North Steyne, Cibaria is the latest spot by Alessandro and Anna Pavoni (joining their popular restaurants a’Mare, Ormeggio and Postino Osteria).

“When people think of Cibaria I’d like them to think of the Italian way of eating and socialising around a piazza,” says Alessandro.

“The great thing about Cibaria is that you can now create your own Italian experience in one place! And being right on the beach, the view is one of the best in Australia.”

Broken into several sections, Cibaria is open every day of the week from 7am in the cafe and gelateria, offering lunch and dinner in the restaurant, and casual bites and drinks in the bar until late.

Cibaria Trattoria

The main restaurant space of Cibaria, the trattoria operates from 11.30am until late every day of the week. In the spirit of Italy’s buzzing local piazzas, the menu is split into sections including salumeria, friggitoria for fried snacks, spaghetteria, and pasticceria.

Standout dishes include heaped scoops of gorgonzola served from a tableside trolley with caramelised walnuts and honey; tuna and kingfish crudo; lasagne fritta; and spaghetti aglio e olio with crab, lemon and a spicy crumble.

The bisteccheria offering covers proteins cooked over coals and embers (including a classic bistecca alla Fiorentina and whole fish), while white and red pizzettas and Sardinian flatbreads come from the wood-fired oven.

Cibaria Caffetteria 

Open for espresso from 7am daily, the cafe at Cibaria has its own menu available until 4pm available to enjoy under striped umbrellas or take away.

Simple breakfast dishes and pastries are perfect for pairing with a coffee in the beachfront location, while lunchtime offerings include pizzettas, paninis made on Cibaria’s signature foaccia, and salads.

Cibaria Gelateria 

Sure to be one of Manly’s new beachfront staples, the gelateria scoops classic house-made flavours like Piedmont hazelnut, 68% chocolate and buffalo yoghurt with Amarena cherries.

Cibaria’s signature flavours include fior di latte gelato with strawberry jam and caramelised brioche, and toasted CopperTree butter gelato with coffee biscuits, and there’s a bunch of vegan sorbets on offer too like a refreshing Amalfi lemon sorbet with basil and candied lemon.

Cibaria’s offering for beachfront drinks does it all: it’s described as a ‘cocktaileria’, ‘birreria’ and ‘champagneria’—so there’s something for everyone.

The buzzing Manly bar hosts regular DJ sets plus a daily aperitivo hour, with its own menu of bar snacks like cacio e pepe fritters, lobster rolls, a smashed burger and the signature Cibaria Club sandwich.

The cocktail list has the Cibaria Negroni (nduja-infused Four Pillars Dry Gin, Campari, Cinzano 1757 Vermouth Rosso, Mathilde Cassis and Pomegranate), classic and signature spritzes, and new creations bringing in beachy summer vibes that suit the bar’s location.

Cibaria is also home to a dedicated events space on level two, plus a private dining room in the trattoria.
