If bottomless fiestas, Beluga caviar bumps and apple pie tacos sound like your pico de gallo, you’ll want to head into Don Casamigos.

This sultry Mexican restaurant and tequila bar is brought to you by the crew that gifted us Fortuna Drink & Eat (they’ve been busy), and joins the ranks of a Mexican-heavy sling of new restaurants across Sydney including Taqueria Zepeda, Nativo Mexican and Mona Vale’s Tulum-inspired Rosa.

Those with a proclivity for the hard stuff will also realise the name for Don Casamigos is also a delicious union of Don Julio and Casamigos tequila, so can rest assured of a tequila-heavy cocktail list with a margarita very worthy of being up there as one of Sydney’s best.

Inside, Don Casamigos is everything you’d want a tequila bar to be—dimly lit, with marble table tops, gold trimmings and crystal chandeliers adorning its interior. There’s a blaring neon sign perched above a Chesterfield-esque couch, and flashes of lush palms between doorways and heavy, pleated curtains.

The menu draws some serious inspiration from Mexican and Latin American cuisine which should tell you that shared plates are really the main affair here. That said, there’s a slew of feeds that show up on the more substantial side including a 300g Black Onyx MB5+, Spanish mackerel and a mushroom quesadilla absolutely worthy of your time.

You can start your feasting by working your way through Don Casamigos’ raw bar offerings including caviar bumps, Sydney rock oysters, kingfish and Australian king prawns. From here, it’s a go hard or go home affair with small plates of juicy pork neck tacos, chicken flautas (rolled tacos that get fired until golden and crispy) pumped with avocado cream, beef empanadas and patata bravas (Spanish fried potatoes). If you’ve got room, you can also dabble in the Mexican creme caramel and apple pie tacos.

Naturally, the signature margarita, which gets a seasonal refresh every so often, should be on your hit list, but we also suggest diving into La Rosita (mixed with vanilla-infused house tequila) and The Esteban which is doused in apricot sugar syrup. On that note, Don Casamigos' bottomless fiesta goes out with a bang every Thursday through to Sunday, offering a selection of small plates alongside the likes of the classic, Tommy’s, and sweet and spicy margaritas.
