Dimly lit, intimate and weaving in pops of colour thanks to its predecessor Eileen's Bar, El Primo Sanchez brings a more polished look to their Mexican-inspired bar in Surry Hills.

After two-and-a-half years dishing out crispy tacos and pouring premium tequila at their previous location in Paddington, this refurbished venue offers an elevated menu refined by years of experience. Bartenders are shaking up a cocktail list that focuses in on tequila and mezcal, serving classics like the Primo Margarita alongside more experimental beverages like the Cuatro Spritz, which mixes flavours of gin, kiwi and prosecco for that tropical bite. There's also a Horchata Colada made with macadamia with anyone and everyone's name on it—don't skimp out.

For that grazing between rounds of drinks, Head Chef Diego Sotelo has mastered a snack-oriented menu featuring empanadas or tostadas in sets of three for $18. Think fluffy pastry filled with chicken and salsa de ají amarillo that oozes out between bites, or golden tacos layered with wagyu mince and creamy sauce. 

Keeping that spark of excitement alive, this bar also features a custom DJ booth (an El Primo siganture) and disco dance floor, as well as a four-person karaoke room so you can make like Coyote Ugly.

The venue extends downstairs, where its very first Maybe Sammy Cocktails Studio combines retail shop, tasting room and workshop space into one. Whether you prefer to buy a cocktail made and bottled to serve with friends at home, or you’d like to bring a special someone to craft cocktails with you during interactive classes, this downstairs corner can deliver.
