After the loss of one of Sydney's most innovative dining spots—Momofuku Seibo—comes another star, ELE By Federico and Karl.
Taking over the old Momofuku digs in The Star Sydney, ELE is the brainchild of two hospitality heavyweights: Federico Zanellato of Lumi Bar & Dining and the ultra-popular Lode Pies fame, and Karl Firia who's worked in top Sydney diners such as Oscillate Wildly and Marque. The pair are also behind popular CBD Italian restaurant Leo and its sister venue Picco Leo. So, it's safe to say they know what they're doing.
Set to be their most ambitious project to date, ELE will hero seasonal Australian produce through technique-driven dishes—this is fine dining, after all. And, inspired by the elements of earth, fire, air, and water, it promises an immersive dining experience (ELE is short for "elements"). So, you can expect more than just your tastebuds to be dazzled.
ELE will boast three separate drinking and dining spaces—the bar, the dining room, and a chef's table experience—all separated by visual and aural components such as curtains, projections, and impressive art installations.
Not to mention your dining experience will be on the move, too, working your way through each space throughout the meal.
"Elemental" cocktails have been designed to complement your experience, like the air-inspired "So Aerate", which features 30 Starwood whisky, wattle seed tincture, blue gum honey mead, and soda. Then there's the more earthy "Fresh Cut Myrtle" with Brix white rum, lemon myrtle and
coconut sorbet, and Louis Roederer NV Champagne.
As well as cocktails, there is an "Elemental" wine pairing ($140 per person) and an "Atmospheric" wine pairing ($170 per person).
"ELE introduces a completely new and exciting way for us to showcase our food," says Zanatello. "[This] is just another way for us to connect deeper with diners so they can immerse themselves further."
"With our industry facing immeasurable difficulties at present, we couldn’t be more excited to welcome diners in for a brand new dining experience," he adds.
ELE By Federico and Karl opens Wednesday 6 April.
