Ester Spirits' fiery red gin bottles have popped up at the likes of Quay, Sean’s Panorama, and Continental Deli. At their Marrickville distillery and tasting room, you can go deep on the Sydney-born gin with tasting flights, mandarin gimlets, and gin-ready snacks like fresh tomatoes, A.P. bread, pickled onions, and canned goods.

Led by husband and wife duo Corinna Kovner and Felix Clark, Ester began life in 2020 as part of a mission to uncover the perfect Negroni—a noble quest, to be sure. Since then, their juniper-forward spirits have won notable gin gongs like "Best in Show" at the Australian Gin Awards and "World's Best Navy Gin" at the World Gin Awards.

“We wanted to avoid the industrial warehouse aesthetic and invent something beautiful instead," Corinna explains of the distillery and tasting room. "We have an amazing artist in residence whose workshop upstairs is textured, layered, and kind of chaotic. That laid the foundations for a dynamic and interesting space of our own."

The tasting room offering is simple. Alongside the Ester tasting flight, on the menu are classic gin cocktails and a few signatures. There's a Martini made with Ester Dry, Regal Rogue Daring Dry, orange bitters, and olive; two G&T variations, a Gimlet stirred with housemade mandarin cordial, and, of course, the perfect Negroni (Ester Dry, Cocchi Torino, and Campari).

Alongside the tasting room and bar, the distillery will operate as a bottleshop 12pm-5pm, seven days. Here you'll be able to shop the Ester range of gins and bottled cocktails, as well as some locally-designed barware and other retails goods.
