JAM Record Bar is a salmon pink vinyl bar from Merivale, inspired by the listening rooms of Tokyo
While Merivale might make you think of wood-fired bread at Totti’s, caviar tarts at Mimi’s, or late-night pitas at Jimmy’s Falafel, the through-line of the group is an atmosphere and environment curated by Head of Music & Nightlife (new dream job unlocked) Nick van Tiel. For JAM Record Bar, he’s amassed a collection of 15,000 vinyl records.
Sushi e chef Michael Fox has crafted a snack-y menu with Japanese-inspired nibbles, like chicken, Murray cod or zucchini skewers, a Fillet-o-Fish spring roll, and a fried prawn sando with lettuce and yuzu kosho tartare.
Cocktails by James Irvine also draw from Japanese flavours and ingredients, with a koji Old Fashioned (Maker’s Mark, koji caramel and bitters) or togarashi margarita (Codigo Rosa, habanero agave, lime and togarashi salt) alongside a neat list with local and Japanese beers, saké and a few wines.
With just 40 seats and a walk-in-only policy, JAM Record Bar is set to be a sought-after spot for a night out in the Sydney CBD.
Merivale’s other upcoming venue, Good Luck Restaurant Lounge, opens on Wednesday 24 April
