Tucked inside the historic Institute Arcade on Darling Street, Nacara Bar & Cellar is bringing a more intimate, European-leaning drinking culture to Balmain—full of mood lighting, good wine and continental small plates.

Set within the 1896 heritage building, Nacara's design is all about honouring the bones of the space. Arched windows, ornate ceilings and deep maroon tones give the interiors a romantic, slightly old-world feel, while the layout keeps things relaxed enough to settle in with a drink (and then another). It’s a clear shift from the area’s pub-heavy scene.

The menu is built for grazing, pulling from a playbook of small plates and share-style bites. Start with gildas, Sydney rock oysters or Cantabrian anchovies, then move into crostini topped with trimmings like Kingfish and macadamia cream, coppa with stracciatella or roast pork with provolone and salsa verde. There’s a handful of larger plates too—burrata, baked camembert, beef tartare—just enough to round things out without overcomplicating it.

Drinks, however, are where Nacara really dials in. The wine list, curated by a former Aria sommelier, moves between Old and New World bottles, while cocktails cover both classics and house signatures. You can also build your own drink, choosing your spirit, flavour profile and even the glass it lands in.

There’s a strong aperitivo thread running through it all. The $15 mini cocktail and tinnie combo is an easy entry point, and there are a few generous extras—like oysters with champagne—that make settling in feel like a no-brainer.

Open late from Thursday through Sunday, Nacara is bringing a different kind of pace to Balmain, so you can finally ditch the pub crawl and appreciate some good old-fashioned, long-form drinking.
