Some transformations simply cannot be ignored, and the $12 million Georges River Sailing Club is one of them.
Central to the renos of this club, which has been standing since the late 1920s, is the unveiling of Porta Dining, a Mediterranean-inspired restaurant paired with cocktails from Maybe Sammy, one of the world’s most awarded bars. The partnership is a natural, the club’s elevated yet relaxed riverside setting calls for drinks that are inventive and fresh, making Maybe Sammy the perfect complement.
As a waterfront venue, the menu naturally draws on local produce, with dishes designed for sharing. Small plates include citrus-cured salmon crudo, pickled mussels and whipped salted cod with rye and fennel crackers, while mains pass slow-roast lamb shoulder, Barra fillets and roast chicken lathered in harissa and guindilla pepper.
The Georges River Sailing Club’s exclusive cocktail partnership with Maybe Sammy marks the bar’s first foray into Sydney’s south, bringing its globally awarded mixology to a whole new part of Sydney without the M5 commute.
