The verdict
The final space unveiled as part of the Dolphin Hotel’s overhaul is the wine room and salumeria and aptly combines two of our favourite things; exotic wines and charcuterie. The Wine Room features a balanced, producer focused wine list with more than 35 wines served by the glass and 150 by the bottle, hailing from Ballarat to the Barossa and also Trentino, Italy (to name only a few). There is also a curated collection of cocktails, including the wet martini, spritz and negroni, all featuring small producer distilled local spirits.
The Wine Room has its very own dedicated kitchen and you can expect a selection of starters, desserts and the aforementioned salumeria, which showcases a seasonal selection of dishes such as Sullivan Gamay Blackmore wagyu bresaola and smoked pecorino montanaro. Shout out to Tony & Robbie De Palma, LP’s, Continental Deli and Victor Churchill’s who are given top credits on the menu.

Bar Demo is a late-night vinyl bar in Newtown, designed for lovers of a well-crafted drink without the fuss. Owners Claudia Morgan and Olly Churcher (Ex-Double Deuce Lounge) are bartenders by trade, so there’s faith to be had in their curated 60-bottle wine list and seasonally crafted cocktails. The venue itself has grown from their joint experiences working and sipping in some of Sydney’s best bars—Morgan says “we wanted somewhere open late where we could buy a bottle without sitting down for a meal, sink some martinis, listen to some interesting music or have a dance”. Bar Demo certainly checks all of the boxes: open 5pm—midnight, Wednesday—Saturday, with no full kitchen but a dedicated menu for snacks, and a soundtrack of full albums played on vinyl, with each night featuring a curated selection of tunes.
