Level Up Your Midweek Meal Repertoire With Diana Chan’s Hearty Cassoulet Recipe

A hearty chicken cassoulet dish is topped with baked beans, bread and parsley.

Ever find yourself frantically rummaging through the kitchen, too tired to think of what to make for dinner? Yep, us too. 

Sometimes standing over the stove can feel like the hardest part of your day, which is why we teamed up with Heinz® and asked Masterchef winner, author and TV host Diana Chan to show us how to make magic with four main ingredients you probably already have lying around your kitchen. 

Throw on your apron and get around this chicken cassoulet recipe with hearty Heinz® Baked Beanz. Best of all, it takes no time at all to whip up. Yep, you’ll want to bookmark this one for later. 

Chicken Cassoulet 

Serves 4

Ingredients

  • 1 tbsp olive oil
  • 4 chicken Marylands
  • 4 rashers of thick-cut bacon, cut into pieces
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 celery sticks, finely diced
  • 2 tbsp tomato paste
  • 500ml fresh chicken stock
  • 2 x 300g cans of Heinz® Baked Beanz in tomato sauce
  • 1 tbsp mixed dried herbs, optional

To serve

  • Freshly chopped parsley
  • Crusty baguette

Method

  1. Place a medium-sized casserole dish over medium to high heat and drizzle the oil. Fry the chicken and bacon together for 6-7 minutes until golden all over. Transfer to a plate.
  2. Add onion, garlic and celery to the pan and cook for 5-6 minutes until softened.
  3. Add the tomato paste and stir through.
  4. Turn the heat down to medium and add all remaining ingredients.
  5. Return the chicken and bacon to the casserole, season well and cook for 10-15 minutes until the stock has reduced slightly and the chicken is cooked through. 
  6. Sprinkle over some chopped parsley and serve with some crusty baguette.
