A Massive New Distillery And Bar With Gin Cocktail Trees Is Coming To Brisbane’s East Side

If anyone were to stand back and take a look at the number of distilleries, breweries and boozy openings that have hit Brisbane in the last few years, they’d probably come to the conclusion that we’re all booze hounds—and let’s be real, we are. There’s nothing we love more than a drinks cupboard stocked with local gins or a Sunday afternoon spent in a bar where the hard stuff is made right there onsite—and now there’s another distillery coming to town where we can have more of both, with Bavay Distillery heading to Morningside. 

Landing in the ‘burb's new Heritage Quarter lifestyle and entertainment precinct, the distillery will be located in a heritage-listed old lime factory. The industrial brick building is currently being given a glamorous glow-up, featuring a lengthy bar with a copper bar top, drop lighting and plenty of greenery throughout. Massive copper stills are also being installed, where the distillers will be brewing up small batch gin, vodka, rum and whiskey, each with their own flavour profile. 

Once the bar opens, you’ll be able to drop in to sample the spirits as well as an extensive cocktail menu, either inside or out in the alfresco area. We’ve also heard there’s going to be tiered ‘gin cocktail trees’ available for groups—sign us up. You can pair them with small tapas plates from the food menu. Want to get more involved than just drinking the spirits? You can—blending masterclasses will give you the chance to age and personalise your own sips in custom coppered miniature barrels. 

Bavay Distillery is set to open in early December, alongside fellow Heritage Quarter residents like Low & Slow, Mas & Miek Ceramic House and the soon-to-open Revel Brewing Co. You can stay up to date on their website here.
