3 Delicious Coco Pops Recipes To Bring Joy To Your Taste Buds

Many Aussie childhoods are filled with the joy (and taste) of the humble chocolate crackle. Airy, crunchy and oh-so-delicious, those tasty morsels are a surefire way to dial up the nostalgia at any event.

Coco Pops-filled desserts aren't limited to chocolate crackles, though. There are a whole bunch of easy and downright delicious recipes you can make at home using this flavoursome cereal that all spark joy.  Uncover three of our favourites below and give them a go next time you're on the hunt for a crispy and crowd-pleasing sweet treat to share with your crew. It's guaranteed to put a smile on their faces without breaking the bank.

Ice Cream Sandwiches

Whip up these tasty hand-held treats next time you're hosting a dinner party with your mates. 

Servings: 12

Ingredients
1 1/2 litres of chocolate ripple ice cream
250g milk chocolate
5 cups Kellogg's® Australia Coco Pops®
100g milk chocolate, chopped

Method
1. Place ice cream into the refrigerator to soften for at least 40 minutes.
2. Place 1/2 of the chocolate into the microwave for 1 minute, stir well and return to the microwave a further 30 seconds–1 minute or until warm and smooth.
3. Using 1/2 of the Kellogg's® Australia Coco Pops®, add 1/2 of the melted chocolate in a bowl and mix well, then spread evenly over the base of a 20cm-sided baking tray lined with greaseproof paper, using a well-oiled knife.
4. Place into the freezer for 5 minutes to set.
5. Then, using a spatula, spread the softened ice cream over the Kellogg's® Australia Coco Pops® starting from the centre and spreading to the edges.
6. When level and smooth, place into the freezer for 5 minutes to set.
7. Heat remaining chocolate and combine with remaining Kellogg's® Australia Coco Pops®, spread evenly over the set ice cream and press down lightly with a rolling pin.
8. Return to freezer and allow to harden, when firm cut into squares and serve immediately.Coco pops ice cream sandwich

Mars Bar Slice

The ideal sweet treat to get your family smiling at the next picnic in the park—a hit for all ages. 

Servings: 20

Ingredients

1 Mars® fun-size share pack (12 Pieces) OR 4 x 47g Mars® bars
90g Unsalted butter or margarine
3 cups Kellogg’s® Australia Coco Pops®
200g chocolate or choc melts

Method
1. Line a 28cm x 18cm slice tin with baking paper
2. In a medium saucepan, add butter and roughly chopped Mars Bars. Stir over medium-low heat until melted and combined.
3. Place Kellogg's® Australia Coco Pops® into a large heatproof bowl. Add Mars Bar mixture, and stir until combined. Press the mixture firmly into tin using the back of a spoon.
4. Place chocolate in a medium heatproof bowl. Place bowl over a medium saucepan of simmering water (don’t let water touch the base of the bowl); stir until chocolate is melted and smooth. Spread evenly over the cooled slice. Refrigerate for approx. 2 hours or until set before cutting into small pieces.mars bar slice

Coco Pops® Brownies Crunch

These tasty morsels are a surefire way to win some serious brownie points (sorry) at the next office morning tea. 

Servings: 24

Ingredients

200g butter
250g dark chocolate, chopped
3 eggs
1 1/4 cups caster sugar
2 cups Kellogg's® Australia Coco Pops®
2 cups self-raising flour, sifted
125g pecans, chopped

Method
1. Preheat oven to 180°C.
2. Place butter and chocolate in a saucepan and melt over very low heat until the mixture becomes just smooth.
3. Place eggs and sugar in a bowl and beat until pale and thick.
4. Mix in the flour and nuts with a wooden spoon then fold in the chocolate mixture. To finish, pour over the Coco Pops and gently press into the top of the brownie mix.
5. Divide the mixture in half and pour each half into a 20cm square cake tin lined with greaseproof paper.
6. Bake in the oven for 30 minutes or until firm to the touch.
7. Cut into 24 squares and store in an airtight container for up to 1 week.
