Brisbane’s best butcher is going for a secondary title of Brisbane’s best sandwich bar with the opening of Eat At Billy’s, which comes to us from the team behind the legendary Meat At Billy’s. Located ight next door to the Rosalie butcher, this sandwich spot is the fruition of years of thinking, dreaming and planning from owner Billy Gibney, with surprisingly good timing on the opening considering Brisbane’s current obsession with all things between two slices of bread. 

The menu has expanded since opening, with seven stacked options now on the menu including the ‘Not A F*$&#en Reuben,’ with melt-in-your-mouth wood-smoked wagyu brisket pastrami, red cheddar pickles and signature sauce; ‘The Redneck,’ stacked with double fried free range chicken tenders, iceberg lettuce and confit garlic mayo; and the ‘Big Paulie’ Porchetta, featuring pork belly porchetta and crispy crackling, salsa verde, pickled red onions, rocket and garlic mayo. You won’t find any fancy bread here either, just classic, thick cut white bread from a local baker that the team are keeping a tight-lipped secret.

On the side you can grab hot chips, cheeky cheerios with tomato sauce (butcher regulars with kids will know all about those) and a handful of boozy sips, including wine, spirits and craft beers, one of which is brewed just for Billy’s by Stafford’s Happy Valley. Best of all, if you find yourself obsessed with any of the meaty sandwich fillings, you can pick up the base protein in the butcher right next door and attempt to recreate it at home—though we wish you the best of luck trying to replicate that pastrami.
