Let’s be real, we’d do a lot of things for a sweet treat—driving down the M1 included. But now, one of Byron Bay’s most popular patisseries is making a move closer to home, bringing along their crowd-favourite eclairs, profiteroles, croquembouches and more to a new location in Brisbane.

Eclair at the Bay is set to open a flagship patisserie in Newstead early next year, featuring a production kitchen and retail store so the team can expand their offering and introduce new flavours to Brisbane. It also means they’ll be closing their OG Byron Bay spot on 30 November, after three years of flavour-first bites and modern choux creations.

Eclair at the Bay was founded in 2020 by Michelin-trained pastry chef Pavel Stolarsky and brand designer Mary Martin, starting with home deliveries and market stalls before opening their first bricks-and-mortar store in 2023. Their loyal following is a testament to their culinary artistry, balancing bold flavours with elegant presentations—all handcrafted to perfection. 

Their signature eclairs and croquembouches are definitely worth a visit once doors open in Brisbane, as well as their seasonal tarts, gluten-free mousse cakes and bespoke celebration pieces.
