The bayside has scored a new home for refined coastal dining in Olivera—the elegant Mediterranean restaurant taking prime position on the corner of Cambridge Parade and the Esplanade in Manly.
Pairing sun-drenched flavours of Southern Europe with Queensland charm, this bright and airy oasis is the latest venture of Consortium QLD (The Arsonist, Wang Chung) and serves to cement Manly’s reputation as a dining destination.
Head Chef Sean Garrett (The Ledbury, Aria, Becasse) brings a wealth of experience from some of the world’s most prestigious kitchens to Olivera—including Michelin-starred UK establishments. From bites and small plates to larger shared offerings, Olivera’s menu leans on freshness and finesse. Highlights include the rich Southern Rock Lobster linguine served with a bisque reduction, blistered cherry tomatoes, and fresh basil or the hearty slow-cooked lamb shoulder paired with caramelised yogurt, silverbeet, smoked olive, and rosemary jus.
On the sweeter side, the caramelised goat’s milk panna cotta served with fig leaf granita is an early stand out, while the drinks offering is equally evocative across carefully curated cocktails. Take the chamomile daiquiri—expect delicately layered sips of chamomile and vanilla-infused rum with refreshing lime. Meanwhile, the fig old fashioned is a brooding take on the classic, balancing fig-infused bourbon with honey and walnut bitters.
