Emporium Hotel’s Signature restaurant has just transformed into FIRMA, a luxe destination for elevated Italian that aims to live up to Signature’s legacy (firma literally means ‘signature’ in Italian), but be enjoyed often, not just on special occasions. Newly stepping up to the plate to helm the kitchen is Italian Chef Alba Rizzo, who’ll be drawing on her Lombardy heritage to create rich, delicious dishes that celebrate seasonal ingredients and local culture.
On the menu you’ll find Lombard signatures like risotto Milanese, slow-cooked osso buco, and pork agnolotti with soft polenta, as well as other traditional Italian dishes like crispy porchetta, bistecca alla Fiorentina and burrata with confit tomato, beetroot and pistachio pesto. Can’t decide what to order? Opt for either the $60 or $120 set menu, which you can also enjoy in the private dining room dubbed ‘Nonna’s Table.’
Dessert here comes in the form of a tiramisu trolley, from which you’ll get a delectable serve of tiramisu made tableside, layered with coffee-soaked sponge, whipped mascarpone cream and shaved chocolate curls. That’s not all that comes around on a trolley—there’s also a martini and negroni trolley on offer alongside a curated list of Australian wines not available anywhere else in Australia.
