Fans of slow sourdough and decadent pastry (read: all of us) have a new way to get their fix, with the team at Sprout Artisan Bakery unveiling a new production facility and retail store in Albion. 

Having built a loyal community and customer base over the last 12 years—from early days in Rocklea to their much-loved James Street store—the new venture is a long time coming, and will see the baked good maestros join the vibrant community at Albion’s Craft’d Grounds.

“When we visited and started to understand more about the values and the ethos of what James and Kirstie Rennell are trying to create at Craft’d Grounds, it was a no brainer,” said Sprout co-owner Rebecca Foley. “We have a lot of community and craft values aligned and it just felt so right so quickly.”

The Albion spot will be a huge step up from Sprout’s existing location, functioning as their headquarters and production facility alongside the James Street store. In a fitting nod to the artisan bakery’s humble roots, the warehouse-style fit-out leans on clean stainless steel and dark wood to let the texture of their breads do the talking. It also allows full transparency into what’s behind the dough.

“We’ve never had the space to showcase the craft, and now from the street at night you can see the bakers working and inside the facility you can see the production team,” said Foley. “It’s welcoming people behind the curtains so they can have more attachment to the process of how their daily bread is made.”

Sprout Albion will also serve to complement Craft’d Grounds’ existing community, forgoing coffee (you can get that from Collingwood Black next door) in favour of fresh house-made drinks. Unlike the usual bottled juices you find at cafes, you can expect a rotational menu with the likes of sparkling apple, lemonade, Earl Grey iced tea, and a berry spritz. 

As for the cabinet, your go-to favourites will all be making the move with seasonal and limited-edition pastry runs, as well as weekly menu changes. Pies, sausage rolls and hot croissant breakfast options will also be available on the go, so don’t be surprised when you leave with a boxful. 

Sprout Artisan Bakery opens in Albion on 9 August.
