Taking up residency on the Brunswick East end of Lygon Street, Don Taco is an emboldened Mexican-inspired restaurant specialising in plant-based dining. Led by head chef, Aura Mora, she's established an all-female kitchen, a true sisterhood team that is combining their shared talent and love for food, proudly producing a menu that is 100% vegan.
"We have this beautiful kitchen that’s so empowered to show the power women have," says Aura.
Flavour is at the forefront here, with the Don Taco team striving to showcase the possibilities of plant-based cooking. The menu is laden with a selection of all-star favourite Mexican staples from the Carnitas Quesadilla which has swapped out the slow-cooked beef for sauteed king oyster mushrooms and is served up with a coriander lime creme with melted vegan cheese.
However, the tacos are the stars here, with six different options in total ranging from mock meat to vegetable substitutions. The Fajitas taco is a timeless favourite; filled with spicy capsicum and onion marinade and then topped with a spicy avocado salsa.
If you prefer your tacos in volume, opt for the bottomless Taco Tuesday, where a crisp $20 per person will score you an endless supply of Don Taco's quality crafted tacos.
