After the Hotel Windsor announced its gluten-free offering last year, Melbourne has since been treated to another coeliac-friendly bakery, Glazed.
The specialist patisserie focuses on sweet and savoury goods, with an ethos around cakes, desserts and breads for those who are gluten intolerant as well as the health-conscious through using organic ingredients and natural flavours throughout the menu.
Glazed comes from chef Liran Adika, who’s worked in both Isreal and New York before relocating to Australia. Adika’s pedigree as a pastry chef runs far back into his career having more recently worked at the famed Vue de monde.
While Glazed offers a full gamut of gluten-free goods, it’s Adika’s signature krembo that’s causing a stir. Think fluffy meringue, combined with a decadent biscuit but completely free of the G. If it’s something savoury you’re hunting down, Glazed’s Jerusalem bagel provides the perfect base for whatever fillings you may have in mind.
Adika plans to re-launch his gluten-free high tea early 2022, which includes quiches, pasties, scones, krembo, mousse tarts and plenty more.
