Iconic Chef Shannon Bennett Is Back On The Tools—But Only For A Good Time, Not A Long Time

You’ve seen him on MasterChef, you’ve probably drooled over his food—and now renowned Aussie chef Shannon Bennett is back in his hometown, slinging stripped-back but seriously cheffy dishes in Fitzroy.

Bennett is popping up for a limited three-month stint at The StandardX, Fitzroy’s newest hotel, kicking off Wednesday, 23 July. He’ll be joined by a dream team of long-time collaborators and fellow Vue de Monde alumni: Cory Campbell (Cuisine Chef of the Year), Ryan Henley (of Christchurch’s two-hatted Pescatore), and Carlos Simoes Santos, a Master Sommelier—one of just 260 in the world.

The crew will serve up a hyper-seasonal, bistro-style menu that’s both elevated and easy-going—designed with Fitzroy locals in mind. Expect modern twists on bistro classics, including handmade breads and pastas, rotating weekly steaks sourced from top Victorian producers, and a strong focus on provenance, sustainability and simplicity.

“I’m excited to be back in the kitchen in Melbourne, doing what I love alongside a team I trust and respect,” says Bennett. “This is about building something that feels part of the neighbourhood—and building the next generation of talent.”

Feedback from guests will help shape the evolving menu, with local favourites leading the charge. And to match the food, Simoes Santos will be pouring an approachable, ever-changing wine list with plenty by the glass.
