The Verdict

Bringing a more refined approach to the fish and chip world is Essendon's newest resident, Scalable Fish-Op. Led by Joe Farrah and the team behind Northcote's 300 Grams, the venture is a refreshing take on the quintessential Australian food group.

In lieu of your standard beer-battered flake, Scalable's approach brings a line-up of thoughtful and considered options, beginning with the astoundingly crunchy yet light soda-based batter which engulfs each cut of fish and hand-size potato cakes. 

Situated on Mount Alexander the ocean-based diner has a familiar and accessible feel, it's just like the corner stores of old but this time with premium ethically-sourced produce and a more modern menu. Take the char-grilled Skull Island prawns with a chilli infused burnt butter, to the tuna patty cheeseburger, and even Southern-fried fish wings.  

Worry not, all the classics are still there with barramundi, gummy, and even King Ora salmon from New Zealand all served up to golden perfection. Making noise since they opened is their now-signature bug roll, a soft brioche bun filled with Moreton Bay Bug, buttery lettuce and lashings of Kewpie mayo, it's zesty, it's creamy, it's just bloody good. 

The fit-out is minimal and is designed to accommodate both floods of take-away punters on Friday night as well as a small space to dine in. There's also a fridge full of Strangelove sodas, nothing better than a tucking into a salt-dusted potato cake with a Yuzu soda in tow.
