When we think of an Aperol Spritz, it's usually accompanied by scenes of boozy brunches and sun-soaked rooftop bars. It's pretty much summer in a cocktail. Though a rendezvous at your local may remain on hold for now, this little number from Parasol & Swing is perfect for mentally transporting yourself to the beach of a dreamy Italian coastline.  

The Auckland joint's recipe shares a sassy twist on the classic Aperol Spritz—their housemade strawberry and lemon peel cordial, adding a little extra sweetness and zesty complexity. 

More than ready to celebrate the first signs of warmer weather? With one of these in hand, you'll be feeling the sunshine in no time. We'll drink to that!

Ingredients

60ml Aperol
45ml Prosecco
30ml Soda
*20ml P&S Strawberry & Lemon Cordial

Method 

Stir everything over ice in your glass of choice. That's it!

*You can make your own simple twist on the Parasol & Swing cordial by mixing half strawberry liqueur and half fresh lemon juice.
