The most quintessential of English customs, the concept of high tea originated in the 1800's when Anna, the seventh Duchess of Bedford, complained of being hungry during the late afternoon, so she requested a tray of tea, bread and butter, and cake to be brought to her room. From this, the afternoon tea ritual as we know it was born.

Lobby Bar at The Singapore EDITION has launched a new afternoon tea where lush greenery sets the stage for a delicious treat.

Be spoiled with a curated selection of artisanal tea by JING TEA, organically harvested, brewed, and poured from all corners of the world. Take your pick from a tea cart that will be pushed over to you to do a scent selection before it is prepared to your preference of hot or cold.

Begin with savoury creations such as Foie Gras, Truffle Croque Monsieur and Cucumber & Yoghurt by Executive Chef Cesar Perez de Anda. Things warm up with Roast Beef Smørrebrød, Salmon Royale and Lobster Brioche.

Courses then take a sweet turn with bakes and cakes by Executive Pastry Chef Alex Chong, a master of French patisserie. Enjoy Homemade Scones, followed by a selection of homemade pastries such as Earl Grey Raspberry Chocolate Tranche, Hibiscus and Blackcurrant Baby Choux and Mirabelle Rose Tart. Finish off with Affogato served from a live cart.

Afternoon tea at The Singapore EDITION starts from $58 per pax ($78 per pax with additional sweet and savoury chef specials) and is served from 1pm to 5pm, Thursday to Sunday.

From now until 31 March, Lobby Lounge at Mandarin Oriental, Singapore is serving up their delicious Herbs and Blossoms Afternoon Tea, where savoury bites infused with flavours of lemon thyme, basil and dill pair beautifully with sweet creations infused with fragrant notes of jasmine, shiso and mandarin orange.

Highlights from the aromatic menu include the savoury tart creation, Chrysanthemum, packed with the harmonious blend of rich, creamy crab meat and the crisp and tangy notes of Granny Smith apple, along with the floral undertone of Chrysanthemum flower. The Lavender savoury delight features tender chicken meat wrapped in light and fluffy homemade lavender-flavoured brioche. For a sweet indulgence, the Elderflower note combines seamlessly with the fruity hint of strawberry, or savour a refreshing combination in Shiso where the citrusy yuzu meets the fragrant, velvety shiso infusion.

Crafted by Executive Pastry Chef Yong Ming Choong, the high tea’s menu of sweet treats are inspired by Lim Tze Peng’s masterpieces. Calligraphy Brush is beautifully crafted from praline, reflecting the artist’s signature brushstrokes, capturing the artistry of his calligraphy. Vibrant Macarons, filled with almond calamansi and chilli, evoke the bold energy and expressive hues of his paintings. A nostalgic nod to Singapore’s history, the Sampan—a chef’s take on the local min jiang kueh—is infused with toasted peanut cream, recalling the sampans along the Singapore River featured in Lim’s iconic works.

The savoury menu by Chef de Cuisine Jacky Lai draws inspiration from Lim Tze Peng’s artistry, with each dish playing on iconic Singaporean flavours. Smoked Salmon Blinis feature the Chinese calligraphy character "家" (home), engraved to symbolise family, warmth, and tradition. This classic blini is localised with the addition of peanuts. The iconic Hainanese Chicken Rice is reimagined with Poached Chicken, rice puffs, and chilli caviar, while the Har Cheong Chicken is reinvented with a slider of charcoal bun, wasabina, and onion jam.

Running from 2 January to 31 March 2025,​ High tea is available daily at ANTI:DOTE from 3pm to 5pm, and additionally on Saturdays and Sundays from 12pm to 2pm, and is priced at $68 per adult with a choice of two non-alcoholic beverages (mocktail, coffee, or tea) and $35 per child (6 to 12 years old).

The Grand Lobby at Raffles Hotel Singapore has recently refreshed its Classic Afternoon Tea featuring delicious new pastry creations and an array of single garden teas from new tea partner, JING.

New sweet treats include the Bergamot Coconut Cake, a tropical herbaceous affair featuring citrusy bergamot cream, delicate coconut jelly and crowned with toasted desiccated coconut meringue, as well as the Garden Herb Strawberry Tartlet, a delicate treat filled with almond cream and adorned with lemon verbena, basil Chantilly cream, along with strawberry jelly. Savoury highlights include the Smoked Salmon and Crème Fraîche on Blinis with Quail Egg and a range of finger sandwiches. Also not to be missed are The Grand Lobby’s signature home-made original, raisin, and savoury scones, complemented perfectly with clotted cream and rose petal jam.

As for the teas, you expect a range of options including a curation of four teas available exclusively to Raffles Hotel Singapore. You can indulge in highlights such as strawberries dipped in Valrhona chocolate, a decadent treat that pairs the luscious berries with rich, velvety chocolate, and the timeless Classic Strawberry Shortcake, a delicate confection of light sponge, fresh fruit, and Hokkaido whipped cream. The Earl Grey Strawberry Mousse, featuring tea steeped for 48 hours and paired with wild strawberry compote and hazelnut sponge, adds a refined touch, while the Fromage Blanc Strawberry Cheesecake offers a creamy twist on a beloved dessert. The menu is rounded out by the Almond Strawberry Tart, with layers of almond cream, strawberry marmalade, and vanilla ganache.

In collaboration with La Maison d’Excellence Savencia, an esteemed French culinary institution in Viroflay, France, the third chapter presents an afternoon tea menu that is a fusion of French flair and Japanese artistry.

The Yuzu Breeze, with Cirka Vodka, whipping cream, yuzu, and soda water, accented by edible paint offers a vibrant start. The savoury course features four expertly crafted creations. Highlights include the Truffle Croque Monsieur Twist, a luxurious take on the classic French sandwich with grated black truffle, turkey ham, parmesan shavings and truffle cream cheese and the Miso Brioche with Scallops which pairs the richness of scallops, tobiko, wasabi-yuzu mayo, and katsuobushi with a white miso brioche for a delightful fusion of French and Japanese flavours.

You can then indulge in a selection of eight exquisite desserts, where the artistry of French and Japanese flavours and techniques come together. Standout creations include Ginger.Lily Chouquettes, featuring a signature tea-infused crémeux and tea gel, and delicate garnish of lemon verbena and the Violet Chocolate Gateau with layers of banana jam, milk chocolate mousse and raspberry crepes.

The journey starts with a modern twist on Chicken Rice, featuring tender poached chicken breast sitting on a fragrant rice ball, complemented by a zesty garlic chili puree. You can also savour the Hainanese Kurobuta Pork Chop, served in a brioche sando with the classic HP ketchup sauce, honouring Singapore’s Hainanese heritage while infusing a mouthwatering twist. For a seriously authentic taste of the Lion City, look no further than the Chilli Crab Petit Pain which offers a bite-sized delight of one of Singapore’s most iconic dishes.

Leading the modern renaissance of classic Tuscan fare, GEMMA has recently launched a new afternoon tea experience where you can indulge in a spread of gourmet Italian snacks and sweets, paired with their exquisite selection of teas, sparkling bubbles and crafted cocktails.

The Leaves & Bubbles menu features a diverse variety of savouries such as Burrata, San Marzano Jam, cold cuts like Levoni Parma Ham, Insalata Russa, Potato Salad, Organic Eggs, Prosciutto Cotto, Cooked Ham, and more. Of course, no high tea is complete without desserts like Gemma Tiramisu, Gianduiotto, Gianduja Chocolate, and Piedmont Hazelnuts.

To elevate your afternoon tea, you can choose between beverage packages: $48 for continuous pours of coffee and tea or $68 for continuous pours of coffee, tea, Aperol Spritz and Prosecco.

Inspired by Singapore’s Garden City and the vibrant connection between nature and gastronomy, Tea Lounge at Conrad Singapore Orchard has launched their new Edible Garden In Bloom high tea offering, available until 27 April 2025. This seasonal experience is a tribute to Singapore’s botanical heritage, weaving edible florals and botanicals into each delicious dish.

The Edible Garden In Bloom Weekday Afternoon Tea is available from Mondays to Fridays, between 3pm and 5pm, and includes a selection of light sandwiches, handcrafted scones, and delicate pastries. Highlights include the Japanese Egg Salad Sakura Sandwich, which reinterprets a classic with a delicate infusion of floral accents. The Salted Egg Yolk Pumpkin Quiche brings together savoury and sweet elements, paying homage to Singapore’s love for bold flavours, while the Rose-Flavoured Toast with Raspberry Spread is a fragrant nod to the beauty of edible flowers.

There’s also the Edible Garden In Bloom Weekend High Tea which features a lavish buffet and is available on weekends with two seatings from 12pm to 2.15pm and 3pm to 5.15pm. Expect signature dishes such as the made-to-order Nonya Lobster Popiah, Caramelised Kurobuta Pork Char Siew, and Signature Laksa, accompanied by a curated selection of charcuterie, house-cured gravlax, and fresh salads. The dessert buffet completes the experience with an elegant take on local sweets and cakes like the Torch Ginger Rose Apple Sago, Jasmine Rice Pudding with Mango Tart, and the Vanilla Sugee Cake with Salted Caramel.

The Edible Garden In Bloom high tea offering at Conrad Singapore Orchard is available now until 27 April 2025 and is priced from $54 per adult and $27 per child aged 6 to 12.

Pacific Emporium at Pan Pacific Singapore has launched a new afternoon tea perfectly blending a timeless occasion with fragrant Singapore flavours.

The menu delves into beloved Southeast Asian cuisine with a twist, through savouries such as Singapore Chilli Crab Meat in Egg Custard with Mini Bun, Hai Tien Lo’s Salted Egg Yolk Yam Puff, and the Penang Crispy Pork Lobak with Five Spices wrapped in Bean Curd Skin. Picture-perfect sweets with local flair include the Mango Pomelo Sablé and Coconut Bandung with Chendol French pastry.

Exclusively on weekends, the afternoon tea will also feature five tantalising local experience live stations, serving Prawn Noodle Soup with Fresh Tiger Prawn, Water Spinach, and Sliced Pork, Penang Tangy Assam Laksa, Wok Hei Char Kway Teow with Pacific Crab Meat, Local Fruit Rojak, and D24 Durian Crêpe.

Choose from a selection of TWG teas such as the Moonfruit Black and Eternal Summer for the perfect afternoon tea accompaniment or elevate the experience with an optional add-on of a glass of Taittinger Brut Réserve Champagne.

Afternoon tea is available at Pacific Emporium daily, with two seatings at 1pm until 3pm (1st seating) and 4pm until 6pm (2nd seating).
