150-Foot Superyacht Restaurant Solaré Is Opening On Sydney Harbour Soon

A first-of-its-kind dining experience for Sydney, three-level restaurant and bar Solaré will set sail on Sydney Harbour this summer, taking inspiration from Mediterranean beach clubs and the lavish yachting lifestyle—and giving us the chance to live it for a few hours.

“Sydney is renowned for its incredible waterfront restaurants, but until now, no one has brought an exceptional dining experience onto the harbour,” says founder Scott Robertson.

“Where else can you enjoy a long lunch, take in the full spectrum of harbour views, and then retreat to a daybed to soak up the sun?”

The 150-foot superyacht will cruise for three hours at lunchtime and dinnertime daily, with a different experience available on each of its three luxe levels from $50pp.

On the main deck, the 60-seat Dining Room will serve a $185pp, seasonal Italian tasting menu at lunch and dinner by executive chef Pablo Tordesillas (previously head chef at Totti’s Bondi). 

The opening menu includes brioche with ama-ebi prawn, finger lime and caviar; ox heart tomatoes with basil, melon and stracciatella; reginette pasta with Moreton Bay bug, crustacean butter and chilli; and zesty desserts perfectly suited to a day on the water.

Solaré’s drinks program by Ed Loveday (previously co-owner of ACME, and creative director of The Point Group) sticks to the Mediterranean inspo, with a hefty selection of uplifting white and rosé wines, a signature tableside martini service delivered on custom trolleys, and cocktails combining aperitivo culture with holiday favourites and a selection of Champagne-based creations.

On Solaré’s middle deck, The Terrace will be a space for socialising, with a cocktail bar and a la carte menu for more casual experiences, accessible with a $50pp Cruise Pass. Upstairs on the members-only Sun Deck, guests can book daybeds and booths for a beach club experience on the water.

The stunning superyacht's interior styling is inspired by Italy’s glamorous coastal regions and the warmth of Euro summers, with splashes of yellow and orange tones, teak furniture, and opulent elements like solid green onyx surfaces in the Dining Room.
