Boutique Sydney accommodation The Grand National Hotel by Saint Peter will open on Friday 31 January, 2025. A new hospitality offering from Josh and Julie Niland—the couple behind the world-respected Saint Peter seafood restaurant—the hotel has 14 luxury rooms set directly above the Paddington restaurant and bar.
“We want the restaurant and the rooms to complement each other as much as possible,” says Josh Niland.
“Opening the hotel allows us the opportunity to fulfil our vision of… a thoughtful 360-degree hotel experience, from handmade chocolates on your pillow to the breakfast cooked by our team.”
The hotel’s interiors were designed by Studio Aquilo, with original features including marble fireplaces, architraves, and tiling retained to reflect the history of the 1890-built pub.
The overall palette reflects the Australian landscape, with more colour and texture than the restaurant’s scheme splashed across intricate wallpapers, maximalist carpets, and lush velvet headboards that complement the heritage setting.
Queen and King rooms and suites are decorated with fish fat candles, ceramics made from fish bones, and paintings and prints selected by Woollahra’s Olsen Gallery, spanning pieces by emerging artists and sketches by Ken Done.
“When approaching the hotel, we paid as much attention to detail to the design and furnishing as we did with the restaurant. This is our first venture into being hoteliers, and we knew that we wanted to apply the same level of care to the rooms so that they weren’t just an addition to Saint Peter but a destination in their own right,” says Julie Niland.
A stay at The Grand National by Saint Peter includes breakfast (with dishes like marron scrambled eggs or spanner crab omelettes created by the Saint Peter team exclusively for hotel guests), a complimentary non-alcoholic mini bar and snacks.
