Brooki Bakehouse Opens Its Biggest-Ever Flagship On The Southside

Brooke Bellamy’s world-famous cookies now have a new home in Fish Lane, with Brooki Bakehouse adding another Brisbane store to their sweet stable. 

The new South Brisbane flagship is a more grown up version of the OG Fortitude Valley store. According to Bellamy herself, it’s “a little more boujee, a little more Brooki”—featuring a larger footprint than any of its other locations with in-store dining for those who simply can’t wait to tuck into the goods. Plus, if you can't end the day without a sweet treat, you'll be very pleased to know that this Brooki Bakehouse is open well after dark from 10am to 10pm daily. 

All of Brooki’s best-selling flavours are available, from the Biscoff-injected cookie butter to the red velvet with cream cheese swirled through the dough and the milk choc hazelnut laden with Nutella. You can also expect a very special Queensland-exclusive flavour to be rolled out soon in a nod to where it all began.

“It only makes sense for us to give our Queensland customers their own unique cookie,” Bellamy said. “We were born in Brisbane and now from Queenslanders’ support have been able to take our brand across the country and to the world.”

With the new store comes a brand-new drinks menu that will be launched nationwide—taking Brooki’s signature flavours and turning them into specialty drinks you’re sure to see all over your feed. Think birthday cake matcha, cookie dough iced lattes, and the much-loved Belgian hot chocolate alongside seasonal specials. 

The Fish Lane store is only the beginning of a massive year for Brooki Bakehouse, with world domination next on the agenda. Following the opening of their first Sydney outpost at Sydney Domestic Airport last year, they will also be opening their first Melbourne store in May, and have announced flagships in London and Dubai set to open later this year. 

“We've now grown our team to more than 70+ employees in Australia and we're excited for this next phase of growth to keep growing the team both in Brisbane and beyond,” said Bellamy.
