The Crowbar Crew Are Opening A Slick Two-Level Restaurant In A Heritage Apothecary Hall

The team behind Crowbar—aka Brisbane’s go-to live music joint that’s just the right level of rowdy—is launching a new venue that’s swapping the subwoofer for a record player. 

Never Enough is turning Fortitude Valley’s heritage Apothecaries Hall on Ann Street into a two-level bar and dining room serving dry-aged menus and late-night wines to the tune of curated vinyl selections. It marks the next chapter for founders Trad Nathan and Tyla Dombroski, who have spent a decade building epic music venues in Brisbane and Sydney, and are now leaning into their hospo creds with their broader venture Long Lunch Group. 

“Never Enough is really about the things we love: food, drinks, music, art and being around people,” said Dombroski. “There are never enough of those moments, whether it’s another round, another dish on the table or just another hour spent with friends.”

While we’ll never say no to a smashed burger at Crowbar, Never Enough will serve up a more elevated offering led by Executive Chef Trent Lymn (previously The 203). In the main dining room downstairs, you can expect refined, produce-led plates while the upper level will house a relaxed bar setting for grazing on fresh seafood, charcuterie and lighter plates. 

“I’m excited to be working with Trad and Tyla across their venues and to be creating a new food-forward concept in the Valley,” said Lymn. “The menu will focus on seasonality, ageing and late-night small plates designed to sit comfortably alongside the drinks and the energy of the room.”

Likewise, the drinks are less likely to be thrown back and more likely to be savoured, featuring a curated wine list alongside fortified wines, aperitifs, amaros and premium spirits. It’s designed to complement the food and rhythm of the venue, taking you seamlessly from long lunch to a nightcap that turns into something more. 

“Opening Never Enough has been a long journey for our team, shaped by years of chasing great bottles, generous hospitality and the kind of dining experience that stays with you,” said Nathan. “I’m incredibly proud of the team and the level of care they’ve poured into every detail.”

Never Enough opens on Saturday 29 March.
