This Upcoming New Farm Opening Is A Pasta Institution In The Making
When Gertie’s closed its doors after a three-decade tenure, it left big shoes to fill. But celebrated chef Will Cowper is taking that iconic corner of New Farm and turning it into an Italian eatery that has all the makings of Brisbane’s next institution.
You most likely know Cowper as the head chef of OTTO Brisbane, as he led the kitchen of the waterfront restaurant for ten years since day one. However, his next venture called Pici is tapping into the neighbourhood energy with cosy dining at its core.
“The site excited me as it was always considered a Brisbane institution,” said Cowper. “That’s something you can’t force; it’s a natural evolution and somewhere the locals have fond memories of. I hope to create a space that is warm and inviting, with a food offering that leaves people like they’ve had a big hug.”

Named after spaghetti’s Tuscan sibling, you can expect Pici to have a heavy focus on pasta alongside snacks, lighter entree-style plates, rotating share-style dishes and classic desserts.
“The name Pici is inspired by my love for the shape of pasta. “The fact it’s hand rolled means it gets the care and attention like no other.”
Of course, nothing pairs better with a bowl of pasta than a good vino, and at Pici there’ll be a strong focus on Italian wines and Australian versions of Italian varietals, plus bottled beers and classic cocktails executed well.
The hallmark of a good institution is somewhere you want to return, which is exactly what’s influenced Pici’s style. It’s a place where you can drop in for a quick plate of pasta and a glass of wine at the bar just as much as you can settle in for multiple courses and conversations fuelled by one more drink.
“I want people to feel like Pici is a place to come whether you're celebrating solo, with your family, with a loved one or it's just a Wednesday night and you can't be bothered to cook,” said Cowper. “We've designed the space with this flexibility in mind, so no matter what the reason you had for stepping through the front door, you leave with a full stomach and a smile on your face.”
Pici is set to open this September.
