Race To Make A Booking At The Hellenika Team’s New 60-Seat Sushi Restaurant

Put down the spanakopita; STK Group (the minds behind Hellenika, SK Steak & Oyster and Sunshine) is unveiling Sushi Room on Tuesday 14 June, a new fine dining offering that's all about incredible seafood with a side of theatrics.

Led by chef Shinpei Raikuni, Sushi Room will "transcend existing Japanese dining offerings in every way—primarily due to the exceptional quality of the seafood we will acquire, the superior skills of [our chef] and the contemporary design of the tailored spaces," says owner Simon Gloftis.

Naturally, various styles of sushi and sashimi are the main event, with seafood sourced from throughout the Pacific served up as moriawase sets, rolls, fried and grilled dishes, and a selection of caviar and oysters available a la carte, and as set menus or omakase experiences.

The Japanese influence will extend to drinks, too, with loads of sake and whisky to complement the experience, plus international wine and cocktails nodding the theme with ingredients including shiso, yuzu and wasabi.

In the spirit of The Calile Hotel precinct in which Sushi Room is located, there's plenty of consideration given to the aesthetics, with the Richards & Spence-designed interior drawing from Japanese mid-century pop culture expressed through colour (as in the bold red eight-person private dining room), texture like natural stone and timber, and materials like Japanese paper.

With 60 seats, Sushi Room will open Wednesday–Sunday for lunch and dinner seven nights a week, with bookings available here from Tuesday 14 June.
