The Verdict
Since opening doors in 2021, Sushi Room has welcomed diners into its sleek mid century-inspired interiors for a nuanced fine dining experience built on time-honoured Japanese culinary traditions and the epitome of excellence. Now, Sushi Room is set to unveil a stunning new extension—adding an elegant bar and dining space to the offering.
Taking over a neighbouring shopfront on the ground floor of The Calile Hotel, Sushi Room’s expansion will introduce a more approachable and relaxed atmosphere to the space in the form of an alfresco dining area lining Doggett Street and a new marble bar outside of the main restaurant. Renowned architecture team Richards & Spence will once again be leading the design, from the brushed-steel furniture lining the sidewalk to the mirrored glass ceiling installation overseeing the new bar. With contrasting interiors to set the extension apart from the original venue, these latest additions will serve as the new entry point to Sushi Room—and set the tone for the experience within.
“The new Sushi Room will be quite versatile, so whether you want to start the night there, finish up with a nightcap, or use it as your whole dining experience, it’s completely up to you,” says owner Simon Gloftis (Hellenika, SK Steak & Oyster, Sunshine). “Now we want people to feel comfortable walking in, having a few things—maybe a sushi roll, a couple of nigiri, a cocktail—and not feel overwhelmed by a full menu. Of course, if you do want the full menu, you can sit there and eat to your heart’s content.
Sushi Room’s iconic 9.3-metre Japanese Hinoki sushi counter will remain the centrepiece of the main dining room, but the existing restaurant will also be expanding to seat roughly 100 rather than the original 60-seat space. With Head Chef Shimpei Raikuni at the helm, you can still expect an experience cemented in theatre, precision and traditional mastery across the a la carte menu and omakase offering.
