From a distance, you might mistake Koka Patisserie for a fruit stand. But one bite will tell you it’s so much more—delicate layers of mousse, fruit compote and crunchy textures that make for one mind-blowing dessert. In France, they call it trompe l'oeil, the French term for ‘deceives the eye’. Founder Hajer Ahmad was inspired by the fruit-shaped desserts she discovered in Paris and now, after finessing every detail and a successful pop-up in Calamvale, she’s bringing these hyper-realistic beauties to Westfield Mount Gravatt.
It’s a satisfying crunch on the outside and creamy, moussey goodness on the inside—and it looks just like the fruit it’s mimicking. Flavours at the Westfield Mount Gravatt pop-up will rotate on the reg, with the likes of mango, raspberry, coconut, lychee, pecan and peach making an appearance. Ahmad told Urban List each dessert is a labour of love, taking several days to perfect by hand.
"Every dessert is handmade over several days and goes through multiple stages," said Ahmad. "Each component is prepared separately before being carefully assembled by hand. From the fruit insert and mousse to the chocolate coating and signature velvet finish, every step is done with precision to create a dessert that looks just like real fruit while tasting just as impressive."
