West Perth’s New Dining Room Is A Multicultural Love Letter To Modern Australian Food

Perth's newest dining room, CU29, doesn't define itself by a single cuisine. Instead, it approaches its menu as a multilingual love letter to the cultures that have quietly shaped modern Australian dining for decades.

It's a philosophy that reflects owner Alberto Tassone's own journey. Born in Switzerland to Calabrian parents, Tassone's hospitality career has taken him from Lucerne through Thailand and the Philippines before eventually landing in Perth. Those experiences now inform CU29, where Western Australian produce meets the techniques and flavours of Asia and Europe without feeling bound by tradition.

Helping bring that vision to life is executive chef Samuel Ho, whose own culinary background spans Japanese, French and Italian kitchens. Rather than confining himself to one culinary tradition, Ho's menu embraces what he calls "international contemporary" dining, layering precision and techniques borrowed from Asia and Europe over the state's best seasonal produce.

The result is a menu that feels both familiar and unexpected. Expect dishes like Wagyu lamb char siu, kangaroo tartare and ageing tuna, each blending influences from different cultures with purpose. It's the kind of cooking that reflects the way many of us eat today, where stringent authenticity makes way to dishes that simply taste good.
