Il Santo, A New “Wine-Led” Osteria, Lands In Claremont

Expect to hear the phrase “just one more glass” thrown around a lot at Il Santo.

At the new “wine-led” neighbourhood osteria settling into Claremont, it’s almost impossible not to stay for one more glass than you originally planned. And that’s kind of the point. With a wine list far more sophisticated than most venues this fresh—courtesy of sister venue Il Lido, recently awarded Australia’s Best Italian Wine List 2025, whose cellars were raided to help prop up Il Santo’s wine creds—the venue knows many guests will arrive for a vino first.

Overseen by Wine Director Michael Mori, the list features more than 100 predominantly Italian labels, with over 30 available by the glass at any given time. Meanwhile behind the bar, expect Italian classics and aperitivo staples, including Milano Torinos, Lemon Drop Martinis with yuzu and savoury Tomatinis.

Once you’ve settled in, glass in hand, however, there’s plenty to keep you there. A curated list of elevated snacks, a contemporary take on aperitivo with an Australian twist, is the perfect starting point. Think Shark Bay prawn sandwiches with house-made tartare, mortadella skewers with quince and local octopus with gremolata.

For something more substantial, there’s daily-made pasta and comforting Italian classics with a seasonal edge, including executive chef Nicola Lunardi’s mafaldine e fagioli, a rich pasta soup inspired by recipes from Veneto, Tuscany and Campania.

And in perhaps the most charming detail of all, Il Santo is bringing back one of Italy’s great end-of-meal rituals: cantucci and Vin Santo. The traditional pairing of almond biscotti dipped into sweet dessert wine is set to become a signature finish here.

The venue itself has undergone a full transformation, with textured rendered walls, travertine finishes, warm timber tones and softly lit spaces designed to move seamlessly from long lunches into late-night wines.

Built as an everyday neighbourhood local rather than a special occasion spot, Il Santo feels tailor-made for Claremont’s growing appetite for casual-but-considered dining.
