Kailis Group Announces Flagship Steakhouse Surreo As First Concept For $12 Million Sorrento Precinct

Sorrento’s coast is set to welcome a luxe new steakhouse and bar, with Surreo and Bar Surreo officially revealed as the first concepts for George Kailis’ mammoth beachfront hospitality precinct, expected to open in April 2027.

Described as a premium seaside steakhouse with a Basque-leaning, Roman-inspired menu and aesthetic, Surreo feels like a natural extension of the elevated experiential dining that made Gibney a runaway success. Expect a menu built around premium meats, seafood, house-made pasta and produce-driven dishes cooked over fire.

Next door, Bar Surreo will offer a more relaxed, drinks-forward experience, though with its own dedicated kitchen and head chef, you can still expect a serious food offering alongside the cocktails and coastal views.

Surreo and Bar Surreo will occupy a mammoth 1000sqm of the 1500sqm beachfront precinct, including what’s being touted as the largest alfresco dining terrace on West Coast Drive. Two additional concepts are still set to be announced later this year, both expected to lean into more casual breakfast-and-coffee style dining.

Back in September, George Kailis and his hospitality group—the brains behind Gibney—snapped up the entire hospitality precinct at the luxe ORA Sorrento development in a $12 million deal, marking one of the most significant coastal hospitality acquisitions WA has seen in decades.

We’re talking more than 1000sqm of prime beachfront real estate sitting pretty on West Coast Drive with uninterrupted views over Sorrento Beach. If Gibney, with its slew of awards and cult following, is anything to go by, expect these new venues to seriously raise the bar for Perth’s coastal dining scene.

The group is once again teaming up with Rezen Studio, the design powerhouse behind Gibney’s award-winning interiors, to create a world-class dining environment to match the beachfront setting. Think dramatic architecture, layered textures and hospitality experiences unlike anything Perth’s north has seen before.

Among the headline features? A monumental wishing well complete with a custom four-metre marble statue, a dramatic stained-glass dry-ageing room where steaks will be butchered in full view of diners, a 4000-bottle walk-in wine cellar with private tastings, a dedicated Champagne Lounge and enormous crystal chandeliers inspired by the Greek goddess of the moon.

Much of the Gibney team is also being pulled into the project, including Group Sommelier Nina Throsby and Group Bar Director James Gentile, so expectations are understandably high.

Construction is already underway, with Surreo and Bar Surreo currently slated to open in April 2027. Until then, consider us very much seated.
