The arrival of a piping hot summer on the west coast means three things: balmy nights, salty beach days—and most importantly—the return of Leeuwin Coast Albany Rock Oysters season

Hosting queen and Urban List CEO, Jacqui, is a fan of vinaigrette droppers to elevate her oyster dishes when guests roll through the door. These little droppers pack a punch, with dressings like champagne, pomegranate, and ginger and lime—levelling up the flavour without overpowering it. 

"It’s like a science experiment meets dining," she says, "it's entertaining theatre!"

Resident oyster lover and WA Account Manager Ana jazzes up her table with specialty oyster plates.

"It's such a fun way to spruce up the simple oyster," she says. "Bonus points if they're a handmade local ceramic—I'm dying to do a pottery course so I can make my own." If you're shopping on a budget, hit up your local op shop for something vintage and unique. 

Turn The Heat Up

Ana's second tip? Get a little spicy.

"There's an epic hot sauce brand here in Perth called Shipstone," she says, which she found through Perth's own King of Oysters, Jerry Fraser

"The Spicy Marg and Bloody Mary hot sauces are actually insane on a fresh oyster—so much flavour!"

Keeping everyone happy and taking a little pressure off? Genius.

When oysters are on the menu at his place, Head of Strategy, Hank, asks the crew to rustle up a sauce or dressing of their choice.
