The Verdict:

It’s time to line up a road trip, as the south west’s long-awaited Busselton Pavilion has just thrown open its doors. The brand, spanking new multi-use venue comes from hospo powerhouse, John Parker (The Royal Hotel, Fleur, Willi’s Wine Bar, The Standard and Dandelion) and includes a restaurant, pub, private dining rooms, wine shop and in-house distillery, with enough space for 500 guests inside the breezy heritage-style stunner.

With the opening, they’ve also appointed acclaimed WA chef Brendan Pratt (ex-Vasse Felix) as Parker Group’s new Culinary Director. Alongside Head Chef Josh de Caen, he’ll be taking the classic pub grub formula up a notch, with a menu full of locally sourced, seasonal produce that highlights the south west’s best.

The menu includes quality produce like grass fed regeneratively farmed beef and the great southern’s line caught seafood, with standout dishes such as the Pav’s legendary marron sanga—an opulent combo of tender shellfish (found exclusively in the south west region), paired with tangy pickles and crunchy lettuce. There's also a dedicated rotisserie lineup where you'll find whole roasted squid and beef tongue doused in a punchy XO sauce alongside a whole roast chook with hot chips, gravy and salad that the whole fam can get stuck into. 

The drinks list is every bit as considered, with delectable vinos and cocktails to suit all tastes. No surprise with Parker Group Wine Director (and Busselton local) Cyndal Petty and award-winning cocktail specialist Elise Godwin leading the way.

Busselton Pavilion is now open for trading five days a week, Wednesday to Sunday, 11am ‘til late. So pop on down to gather and indulge on your next south west vacay.
