The Verdict

Sitting pretty alongside the heritage buildings on Pakenham street, Republic of Fremantle is a modern distillery with moody interiors, delicious high-end nibbles and incredible drinks, which should be no surprise considering the effort that has gone into distilling the brand’s signature gin and vodka from grape to glass.

Start with one of their tasting flights and take note of your faves so you can pick up a bottle to take home later. When you’re ready, head on to the cocktail list—it’s overflowing with modern cocktail creations, spiced up classics, and beautiful bottled concoctions that are perfect for sharing.

But the real gin fanatics will want to enrol for Republic of Fremantle's gin school. The perfect gift to share with your other half, the 2.5-hour session will teach you all about the history of distilling before getting hands-on as you craft your very own bottle of gin (which yes, you'll take home at the end), from selecting your botanicals and building the perfect recipe to distilling it in their one-of-kind copper stills. Oh and don't worry, you'll get a gin and tonic on arrival with more drinks available for purchase at the bar if you're feeling thirsty.

Afterwards, why not tee up dinner in the spacious dining hall at the rear of the building by the incredible Mueller still? The menu features a rotating selection of flame-forward dishes developed by Head Chef Emily Jones, all using the freshest seasonal produce. Think woodfired beef from Blackwood Valley accompanied by seasonal leaves and cumquat gin vinaigrette, grilled asparagus and beef fat potatoes.
