The Verdict

One of the few silver linings to come out of COVID was when Will Meyrick—the chef-owner behind super popular Balinese establishments Sarong and Mama San (to name a couple)—decided to move his family here while Bali was in shutdown mode and open up his own Perth venue, Will St.

The menu is split up into grazing plates, hearty shares and sides, with a stunning dessert list too. We love that while it takes cues from Meyrick's endless Asian culinary adventures, the dishes lean heavily on native, local produce and it all changes regularly with the seasons.

Standouts from our most recent visit include the super fresh oysters topped with a sweet, salty and sour native galangal and lemon myrtle nam jihm dressing (it's our fave way to take oysters now) and the charred pumpkin korma with crunchy chic peas, which punches way above its side dish status.

If you've got at least four on your table, we'd highly recommend ordering the showstopping char sui pork hock too—it comes out shredded with mandarin pancakes, pickles and other sides so you can make your own little wraps. 

Oh and a word of warning, Meyrick doesn't shy away from spice so there's a lot of heat across the menu. Just chat to your waiter if you want some less spicy recommendations.
