Chef André Chiang Is Coming Home With A Brand-New Restaurant At Raffles Hotel Singapore

If you needed another excuse to book a proper long lunch or splash out on a milestone dinner, this is it. Raffles Hotel Singapore has officially announced 1887 by André, the highly anticipated return of Chef André Chiang, opening 31 March 2026. Housed in the hotel’s historic main building, the restaurant is set within the former formal dining room (aka one of the most storied dining spaces in Singapore) and reservations are already open.

Designed as a modern interpretation of heritage gastronomy, 1887 by André takes its name from the year Raffles Hotel was founded. The concept traces Singapore’s culinary evolution from its Victorian-era roots through to the present day, using French culinary techniques as the foundation. Expect menus that reflect culture, craft and time, drawing from the hotel’s archives, local produce and the multicultural flavours that define Singapore as a global crossroads.

For Chef André, this opening marks a deeply personal homecoming. After redefining fine dining in Singapore with the now-legendary Restaurant André, he returns as Chef Patron with what he describes as a "love letter" to both the city and Raffles Hotel. While he’ll be guiding the vision at a strategic and creative level, the kitchen will be helmed by Chef de Cuisine Ben Wang and Sous Chef Roy Kuo (both long-time collaborators who have worked under Chef André for over a decade).

In a refreshing move for Singapore’s fine dining scene, 1887 by André puts choice back into the hands of diners. À la carte menus take centre stage, alongside classic set menu options (a deliberate nod to Victorian dining traditions). History is woven into every detail, from revived flavours inspired by Raffles’ early dining rooms to the use of the hotel’s original silverware, including pieces that were buried during World War II and later uncovered.

The space itself is just as considered. Designed by Bill Bensley, the interiors balance colonial elegance with contemporary touches, referencing the room’s legacy as the former Raffles Grill and Elizabethan Grill. Think marble, wood, tropical elements and glasshouse-inspired details, all layered within Raffles’ iconic architecture. With just 42 seats, 1887 by André is shaping up to be one of 2026’s most exclusive (and meaningful) restaurant openings for Singapore.
