Presented across LUCE, The Lobby Lounge and Man Fu Yuan, the brunch features close to 300 creations and 12 live stations, turning the hotel’s dining spaces into a roaming feast where guests can graze their way through the afternoon.

The spread starts strong with a seafood-on-ice display stacked with freshly shucked oysters, lobster claw, snow crab, scallops, cold-water prawns and baby abalone. Elsewhere, canapés like kaya and foie gras sando appear alongside a cheese selection featuring 20 Les Frères Marchand cheeses and fresh Puglia cheeses including burrata and ricotta. Over at the live stations, risotto salsiccia is theatrically finished in LUCE’s signature Parmesan wheel, while the carving station dishes out slow-roasted prime rib, oven-roasted rosemary lamb, Roman-style crispy pork belly and Peking Irish duck carved to order. The menu also dips into Asian favourites like Singapore chilli prawn, Iberico pork belly with aromatic chilli sauce and a signature laksa station brimming with tiger prawns and scallops.

The hotel’s “Easter, the METT Way” stay package (4-6 April) pairs stylish accommodation with curated Easter welcome amenities, daily breakfast and a celebratory brunch for the family on 5 April, which is an easy excuse to turn the long weekend into a mini staycation.

The highlight is Easter Sunday brunch at L’Amo Bistrò del Mare, where refined Italian sharing plates and sweet treats are served alongside live piano melodies for a relaxed afternoon with family and friends. Meanwhile, little ones get their own dose of excitement with an Easter egg hunt and themed activities happening throughout the brunch.

Earlier in the weekend, Canning Bar & Lounge hosts an “Enchanting Garden” Easter Afternoon Tea curated by Michelin-starred chef Daniele Sperindio, featuring spring-inspired bites like beetroot-cured salmon with crème fraîche and pink peppercorn, tomato supplì, carrot blossom entremet and traditional Colomba Pasquale served with marsala sabayon plus artisanal chocolate Easter eggs to round things out. Set within the greenery of HortPark, the relaxed garden restaurant is turning the long weekend into a lively afternoon of good food and kid-friendly fun.

Highlights include dishes like White Asparagus Truffle Royale Tart layered with wild mushrooms and porcini powder, and Risotto alla Milanese topped with foie gras and saffron-infused jus, both prepared live. Out on the al fresco deck, a charcoal barbecue fires up Gochujang-glazed pork ribs while a carving station dishes out crowd-pleasers like beef Wellington and crispy porchetta. Dessert swings playful with the Easter Exuberance, a layered treat of honeycomb yoghurt, passion fruit curd, mango and calamansi honey sago finished with raspberry sorbet. And of course, there are cakes and chocolate eggs. Executive Pastry Chef Siddharth Prabhu and his team have created five playful single-serve desserts inspired by classic Easter icons, with lineup including the Fluffy Bunny, a white bunny-shaped dessert hiding mango and passion fruit curd inside airy layers, and the Spring Carrot with carrot-walnut sponge, cream cheese and caramelised walnuts. Chocolate fans can go for the Cocoa Mushroom with macadamia brownie and salted caramel, while the Blissful Berry Egg layers Manjari chocolate mousse, briolette cream and fresh berries. Rounding things out is the Easter Chick, a hatching egg filled with mango cubes, calamansi honey sago, coconut mousse and a passion fruit curd “yolk”. The neighbourhood grocer’s Easter Edit rolls out a full spread of festive staples from artisan chocolate eggs and sourdough hot cross buns to a ready-to-share Easter platter, available in stores and online from 10 March. True to Little Farms form, everything sticks to its strict ingredient standards, which ban over 200 artificial additives and preservatives across its shelves.

A highlight for brunch purists is Starter Lab’s sourdough hot cross buns, baked fresh daily using a slow fermentation process and premium French flour, then enriched with grass-fed New Zealand butter. For something more substantial, the Easter Platter (available 3 to 5 April) is designed for sharing and centres on a rosemary-and-garlic marinated Roaring Forties lamb shoulder rack alongside Bostock Brothers’ lemon-and-thyme chicken leg, served with roasted vegetables, triple-cooked baby potatoes and a pair of those hot cross buns. Meanwhile, the chocolate situation is equally stacked, with artisan eggs from Booja Booja, Holdsworth Chocolates, COX by Daniel’s Delight, Happi, Simon Coll and Tony’s Chocolonely.
