Highlights include Miang Pla Tod, where crispy seabass and roasted coconut are wrapped in lotus petals for a fragrant start; Massaman Kaeh, a velvety lamb shank curry slow-braised for six hours in spices and coconut milk; and Gaeng Poo Bai Hoorapha, a golden crab curry perfumed with fingerroot ginger and turmeric.
Even the classics receive reverent attention. The signature Peek Gai Sod Sai, boneless chicken wings stuffed with herbs and minced chicken, remains a masterclass in precision. Founded by two friends who were on a mission to bring boat noodles (a classic Thai street food dish with a rich, savoury broth made from pork or cow blood and lots of spices) to Singapore, Tha Chang Noodle Bar is known for its mouthwatering broth that balances sweet, salty, sour, and spicy notes for that authentic Thai taste.
