Bar Julius is a Euro-inspired bar at the soon-to-open The EVE Hotel Sydney. It’s set to open in January 2025, joining the hotel and other restaurants and bars within the Wunderlich Lane precinct.

It’s a project by Liquid & Larder, the group behind pumping Sydney venues The Gidley, Bistecca, The Rover and Alfie’s, and sits in the lobby of the hotel at the intersection of Redfern and Surry Hills.

Bar Julius will be an all-day spot doing breakfast, bistro-style meals at lunch and dinner, and a curated cocktail and wine list with a strong personality in line with the group’s popular existing Sydney restaurants and bars.

“Bar Julius is inspired by European-style bistros of New York City where all-day dining is prominent amongst a melting pot of guests from local residents [to] nearby workers and travellers,” says Liquid & Larder co-founder and director James Bradey.

The stylish Sydney bar has an eye on art and design, with a bold original artwork by local artist and Dinosaur Designs co-founder and director Louise Olsen dancing across the ceiling, elements of marble, Australian timber and leather, and bold patterns throughout.

The beverage list will span well-known wines alongside an offering from emerging regions and mindful producers, classic and seasonal cocktails, and signature sips like an All Day Mary (horseradish vodka, Melbourne Sake Co. sake, house Mary spice mix and house gazpacho blend with parsley oil) and whisky highball made with a blend exclusively made for Bar Julius by Archie Rose
