The Agnes Crew Open A Nostalgic French Bistro In A Heritage CBD Corner
Steak frites and escargot dance in the candlelight of Brisbane CBD’s new French bistro from hospo heavyweights Anyday—aka the crew behind Agnes, sAme sAme, hôntô and Biànca.
The French Exit has taken over the ground floor of a heritage corner on Mary Street, where Parisian dining now takes centrestage between the parquetry floors, dark timber cladding and soft tan leather banquettes. Pairing warm hospitality with the elegance of tradition, an experience here is nostalgic, intimate and for the soul.

Under the direction of Anyday’s Culinary Director Ben Williamson, The French Exit sees Brisbane-born John Paul Fiechtner return home following stints in Paris (as sous chef at Le Châteaubriand), Melbourne (where he opened Lûme) and the UK (as Group Executive Chef for the Corrigan Collection) to serve in the Executive Role. He’s joined by Head Chef Ryan Carlson who is making the move from Agnes. Together, the team are gently reimagining French classics like steak frites, duck à l’orange, escargot and ananas givré with the help of local produce and creative curiosity.

Of course, what’s a French dining experience without wine? At The French Exit, you can expect a thoughtfully composed beverage program led by Head Sommelier Gianluca Giardini (formerly Biànca) with nearly 600 references—from approachable by-the-glass sips to rare and iconic labels. There’s also a comprehensive cocktail and spirits list, and a curated selection of Australian drops.
“The French Exit will transport you to a classic Parisian bistrot in the heart of Brisbane CBD,” said Williamson. “The dishes will have that classic familiarity for those that have travelled to the city but focused through the lens of Brisbane. Expect classic executions of timeless dishes designed to awaken nostalgia and excite the palate.”

The French Exit marks the third opening for Anyday in 2025, with New Farm welcoming Idle off the back of Agnes Bakery’s closure and Golden Avenue serving as their first foray into the CBD. Bookings are now available here.
